Pumpkin Peanut Butter Bars

Ingredients:
  • 1 1/2 cups nut butter of choice
  • 3/4 cups Pumpkin Spice Naked Shake protein (or vanilla will do if you're not a pumpkin nut)
  • 1/4 cup honey 
  • Pinch of salt
  • 1/2 cup dark chocolate chips 
  • 2 tsp coconut oil


Instructions:
  1. Line an 8x8 dish with parchment paper.
  2. Mix all ingredients except chocolate chips and coconut oil in a medium sized bowl.
  3. Press the ball of dough created in an even layer in your 8x8 dish.  If it's too runny, add just about a tsp at a time more of your protein powder until you get the right consistency.
  4. Melt your dark chocolate chips down in a saucepan.  Be careful not to burn them.  
  5. Stir in the 2 tsp of coconut oil.
  6. Pour the chocolate mixture over your dough layer. Use a rubber spatula to even it out.
  7. Refrigerate for 30 minutes or more.
  8. Cut into 12 even sized bars.
